On Saturday we honored a friend/co-worker of mine to celebrate her upcoming wedding that will be held in Charlotte, NC next weekend. 

For this get together, I made the glorious Pumpkin Fluff recipe that I obtained from a leader at Weight Watchers.  No one at the party knew it was a WW recipe, but they all loved it and requested a copy of the recipe. Here is it for you too as promised - enjoy!


Pumpkin Fluff - 3 Points+
Makes approximately eight 1/2 cup servings

Ingredients:
  • 1 cup(s) fat-free skim milk
  • 2 boxes fat-free sugar free instant vanilla pudding
  • 29 oz canned pumpkin
  • 8 oz fat free Cool Whip
  • 1 Tbsp pumpkin pie spice
Directions:
Mix milk & pudding, then add remaining ingredients.  Keep refrigerated - the longer it sits the better it tastes!
This can also be served with pears, graham crackers, or any other fruit/food you desire.  The leader also recommended using it as pie filling to make your own no-bake pumpkin pie.  Really, the options for this recipe are endless.
