William F. Hoover, a retired police officer with the Port Authority of New York & New Jersey now living in Las Vegas, credits his concierge doctor with changing his lifestyle. Hoover ate the heavy, meat-and-potatoes meals of his childhood until his doctor, Candice Tung, introduced him and his wife to quinoa and other healthy foods that have helped him lose weight and keep his diabetes in check.
